Pen's Spinach Dip


Serves: 20

Ingredients

1 (16-ounce) box chopped frozen leaf spinach
3/4 cup mayonnaise
3/4 cup sour cream
3/4 cup Parmesan cheese
1 teaspoon horseradish
1/4 cup dried, chopped onion
1/4 teaspoon ground pepper
1 tablespoon lemon juice or lime juice
1/3 teaspoon sugar
4 ounces water chestnuts, drained and minced (optional)

Directions:

Cook spinach according to package directions. Cool, let drain in a small colander, then press out as much liquid as possible. Mix all other ingredients with the spinach. Let stand in refrigerator for at least an hour before serving. Serve with thin slices of French bread or bread sticks.
