Chicken Gumbo

2 pounds chicken breasts cut into 1-inch chunks
2 teaspoons dry mustard
2 teaspoons paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon allspice
pinch cayenne pepper
2 tablespoons olive oil
4 ribs celery diced, 1/2-inch pieces
1 onion, coarsely chopped
1 red bell pepper, diced, 1/2-inch pieces
1 green bell pepper, diced, 1/2 inch pieces
4 cups okra
1 (28-ounce) can stewed tomatoes, drained, saving the juice
2 tablespoons tomato paste
1 teaspoon thyme
1 bay leaf
1/4 cup chopped parsley
1 tablespoon crushed garlic


Rinse chicken and pat dry. Combine first 6 seasonings in a bowl and rub into chicken pieces. Lightly brown chicken and set aside. Place oil in Dutch oven. Add celery, onions, red and green peppers, and garlic. Stir and cook for 10 minutes. Add okra and cook additional 5 minutes. Add tomatoes, paste, thyme, bay leaf, chicken and pan juices to Dutch oven. Cover with saved tomato juice and parsley. Cook 1 hour. Serve over rice.
