Scalloped Corn*

Ingredients

1 (15 1/2-ounce) can cream-style corn
1 cup milk fat free, (fresh, dry or evaporated)
1/4 cup egg substitute
pepper
6 saltine crackers (with or without salted tops), crushed
2 tablespoons additional crumbs (This is good use for those crumbs that are left in the party cereal mix jar.)

Directions:

1. Coat a 1 1/2-quart baking dish with nonstick vegetable cooking spray.

2. Mix corn, milk, egg substitute, pepper and 8 crushed crackers. Top with crumbs.

3. Bake at 350°F for 45 minutes.
