Baked Beans In The Pressure Cooker*

Ingredients

2 cups (1-lb) yellow eye, soldier or navy beans (pea beans)
2 to 3 tablespoons reduced-calorie margarine
3 tablespoons molasses
2 tablespoons dark brown sugar or sugar substitute
1 teaspoon dry mustard
3/4 teaspoon salt (optional)
1/8 teaspoon pepper
boiling water (or as much needed)

Directions:

1. Pick over beans, rinse, and soak overnight. Drain. Place in pressure cooker with other ingredients, using enough boiling water to just cover beans. Stir.

2. Clean rim of pressure cooker of any food or moisture. Cover pan. Cook at 15 lbs. pressure for 40 minutes. Allow pressure to go down on its own.
