Mystery Fish Dish

Ingredients

1 tablespoon reduced-calorie margarine
2 teaspoons curry powder
1 medium onion, thinly sliced
3 cups green cabbage, finely shredded
3/4 pound boneless salmon, skinned and cut into 2-inch chunks
1/2 teaspoon salt (optional)
1/4 teaspoon freshly ground pepper
1 teaspoon lemon juice

Directions:

1. Spray casserole dish with nonstick vegetable cooking spray. Melt margarine in covered casserole. Add curry powder, onion, and cabbage stir to coat. Cover and microwave on HIGH for 4 minutes.

2. Stir. Mound cabbage in center of dish and arrange salmon around cabbage.

3. Sprinkle with salt, pepper, and lemon juice. Cover and microwave on HIGH for 8 minutes.

4. Stir. Replace cover and let stand for 3 minutes.
