Halibut With A Greek Flavor*

Ingredients

1 1/2 pounds fresh or frozen halibut steaks, thawed, 3/4 inch thick
2 tablespoons reduced-calorie margarine
1/4 cup egg substitute
1/3 cup skim milk
1 cup feta cheese, crumbled
1/8 teaspoon ground red pepper
1 large tomato, chopped
1/4 cup pitted black olives, chopped
1/4 cup pine nuts or slivered almonds
1 tablespoon lemon juice
Freshly ground pepper

Directions:

1. Cut halibut into 6 portions. Sauté in margarine over medium-high heat for about 3 minutes each side. Place in single layer in baking dish.

2. Combine egg substitute, milk, cheese, and red pepper pour over halibut.

3. Scatter tomato, olives, and nuts over top. Bake at 400°F for 10 minutes.

4. Sprinkle with lemon juice, parsley and pepper.
