1 cup sour cream
2 tablespoons flour
1/3 cup milk
1 tablespoon green onions chopped
1/2 teaspoon salt
1/4 teaspoon sugar
1 1/2 pounds green beans whole, cooked (about 7 cups)
3/4 cup swiss cheese shredded
8 round buttery crackers crushed
1 tablespoon butter or margarine, melted
1/2 teaspoon paprika
Preheat oven to 325°. Grease a shallow 1 1/2 -quart baking dish. In a small saucepan, mix sour cream and flour. Stirring constantly over medium heat,bring to a boil and boil for 1 minute. Remove fromheat. Stir in milk, green onion, salt and sugar; set aside.
In baking dish, layer half of the beans and half of the cheese; repeat layering. Top with sauce.
In a small bowl, combine crushed crackers, butter or margarine, and paprika. Sprinkle over sauce. Bake for 15 minutes or until bubbly.
