Mixed Vegetable Packet

Ingredients

2 zucchini medium, cut in half lengthwise and sliced
2 tomatoes medium, cut up
12 mushrooms medium, quartered
1/2 cup onion chopped
2 tablespoons parsley chopped
1 teaspoon seasoned salt
1/4 teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons butter or margarine, cut in pieces

Directions:

In a medium bowl, mix zucchini, tomatoes, mushrooms, onion, parsley, seasoned salt and pepper. Toss with cornstarch.

Tear off two 18-inch pieces of heavy duty foil. Place vegetable mixture in center of double thickness of foil. Dot with butter or margarine. Bring two sides of foil together over food fold edges over several times to seal,allowing space for steam. Fold short ends up and pinch together to seal ends securely.

Place packet on grill about 4 inches above medium coals. Turning over several times, cook for 30 to 45 minutes or until vegetables are tender. Stir before serving.

If desired, open packet, sprinkle with 1/4 to 1 cup shredded cheese of your choice and re-close to melt.
