Pizza-Stuffed Spuds

Ingredients

4 potatoes medium baking
2/3 cup milk
1/4 cup Parmesan cheese grated
3/4 cup mozzarella cheese shredded (about 3 oz.)
3 ounces pepperoni or salami, chopped (about 1/2 cup)
1 teaspoon parsley dried
1/4 cup pizza sauce or spaghetti sauce

Directions:

Bake potatoes

Slice off the top 1/4 inch of each potato. Discard top. Carefully spoon out centers, leaving about 1/2 -inch shell.

Place potato pulp in a medium bowl and mash until smooth. Stir in milk and Parmesan cheese until blended. Stir in 1/2 cup of the mozzarella cheese, pepperoni and parsley. Mound into shells. Arrange on a baking sheet. Spoon 1 to 2 tablespoons sauce over each. Sprinkle with remaining mozzarella cheese. Bake in a 400° oven for 5 to 8 minutes or until hot and cheese melts.
