Pepper Relish

   2 red bell peppers sweet, minced
   6 green bell peppers minced
   6 tomatoes ripe, peeled and chopped
   3 onions large, chopped
   2 cups celery chopped
   1 lemon peeled, quartered, and thinly sliced
   1 orange peeled, quartered, and thinly sliced
   2 cups sugar
   1 1/2 tablespoons salt
   1 quart cider vinegar

Cover peppers with boiling water and let stand 10 minutes; drain. Add more boiling water, let stand 5 minutes; drain. Add tomatoes, onions, celery, lemon, and orange. Heat sugar, salt, and vinegar in a large kettle and boil 15 to 20 minutes on medium-high heat to reduce liquid by one-half. Add chopped vegetables and bring to boil. Simmer 10 minutes. Pack into hot sterilized jars and process in a boiling water bath for 5 minutes.

High altitude adjustment: Add 1 minute processing time for every 1,000 feet elevation above sea level.
