Peasant Soup With Basil Sauce

Ingredients

1/2 cup northern beans dried
1 quart water boiling
2 tablespoons olive oil
1 cup onion minced
1 1/2 cups green beans fresh, cut into 1/2 -inch lengths
1 1/2 cups ham diced cooked
2 cups potatoes peeled and cut into 1/2 -inch pieces
2 quarts water
2 cups turkey broth or chicken broth
1 teaspoon salt
1/4 teaspoon black pepper freshly ground
1 1/2 cups zucchini sliced
1 cup spaghetti thin, broken into 1-inch lengths
Basil Sauce (recipe follows)
Basil Sauce:
5 cloves garlic peeled
1/2 cup basil fresh, tightly packed, or 3 tablespoons dried
1 tablespoon parsley chopped fresh
2 tomatoes large, peeled, juiced, and seeded
1/2 cup Parmesan cheese freshly grated
1/4 cup olive oil
1/4 cup vegetable oil

Directions:

* Place garlic, basil, parsley, and tomatoes in food processor or blender. Cover and process until smooth. Add cheese process. While machine is still running, pour in oils very slowly until mixture thickens like a mayonnaise. Cover and set aside. Place dried beans in 1 quart boiling water and boil for 2 minutes remove from heat and let stand for 1 hour, or soak overnight. Drain before using. Heat oil in 5-quart saucepan. Add onion sauté, stirring, for 5 minutes or until soft but not browned. Add green beans and ham continue to sauté for 5 minutes. Add potatoes, Great Northern beans, 2 quarts water, and broth bring to boil, reduce heat, and simmer. Season with salt and pepper cook, partially covered, for 1 hour. Add zucchini and cook 30 minutes or until vegetables are tender. Can be made ahead to this point and kept until just before serving. Add spaghetti 8 to 10 minutes before serving cook until just tender. Slowly pour Basil Sauce into soup and cook gently for 5 minutes.

* A 15-ounce can of Great Northern beans can be substituted for the dried beans drain and add with zucchini.
