Goulash Soup

Ingredients

2 teaspoons vegetable oil
1/2 cup onion chopped
3 cups beef broth
1/2 cup potato grated raw
1 1/2 teaspoons paprika
1 1/2 teaspoons tomato paste
1/4 teaspoon salt
1/4 teaspoon caraway
1/8 teaspoon thyme dried leaves, crushed, or ground thyme
pinch crushed red pepper
1/2 cup potato cubed raw
3/4 cup boneless beef chuck cooked, cut into 1/2 -inch cubes
1/2 cup egg noodle uncooked
Parmesan cheese Grated
Coarsely grated tart apple

Directions:

Heat oil in saucepan and sauté onion until tender. Add broth, grated potato, paprika, tomato paste, salt, caraway seed, thyme, and red pepper. Bring to a boil cover, simmer for 30 minutes. Stir in cubed potato cook 10 minutes. Add meat and noodles cook 10 minutes or until potatoes and noodles are done. Garnish individual servings with Parmesan cheese and apple.
