Nutmeg Spinach Souffle

Serves: 6

   1 pound spinach
   2 tablespoons margarine
   2 tablespoons flour
   1 teaspoon salt
   1 cup milk
   4 eggs yolk, beaten
   1/4 cup onions chopped
   1/8 teaspoon nutmeg
   4 egg whites
   1/4 teaspoon cream of tartar
   3 tablespoons parmesan cheese


Wash spinach; cook in small amount of salted water. Drain and press out all excess water; chop spinach. Melt margarine in saucepan; add flour and salt and blend. Gradually add milk and stir till thickened. Gradually add beaten egg yolks. Stir in spinach, onion, and nutmeg. Beat egg whites and cream of tartar till stiff. Fold in spinach mixture. Pour into greased souffle dish. Sprinkle with Parmesan cheese. Bake at 375 degrees F. for 50 minutes or till set.
