3 eggs
1 1/4 cups sugar
2 tablespoons lemon peels grated
1/2 cup lemon juice
3/4 cup butter softened

At least 1 1/2 hours or up to 2 days before serving: In a small saucepan, combine eggs, sugar, lemon rind and juice. Stirring constantly over low heat, bring to a boil, about 15 to 20 minutes. Remove from heat and cool.
With an electric mixer at low speed, beat in butter until blended. Cover and chill at least 1 hour or up to 2 days.
About 15 minutes before serving: Remove from refrigerator. Let stand until room temperature.
Serve with toasted English muffins or biscuits.
