Fruited Cookies

Ingredients

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup brown sugar packed
1/2 cup butter or margarine, softened
1 egg large
1 teaspoon vanilla extract
2/3 cup raisins
2/3 cup walnuts chopped
1 (8-ounce) can crushed pineapple well drained (1/2 cup)
1/3 cup coconut flaked
1/3 cup red maraschino cherry chopped

Directions:

Preheat oven to 375°. Grease cookie sheets. Mix flour, baking powder, baking soda, and salt in a medium bowl. Beat brown sugar, butter, egg, and vanilla in a large bowl with an electric mixer until fluffy. Stir in raisins, walnuts, pineapple, coconut, and cherries. Stir in flour mixture until blended. Drop by teaspoonfuls 2 inches apart on cookie sheets. Bake for 10 to 12 minutes until golden brown. Cool cookies on wire racks.
