Cinnamon-Apple Salad

Ingredients

4 cups water
1/2 cup sugar
1 stick cinnamon (3") or 1/2 cup cinnamon red hot candies
6 to 8 drops food colors red (if using cinnamon candies, omit food color)
6 apples Winesap, cored, peeled and halved
2 (3-ounce) packages cream cheese softened
1/4 cup nuts chopped
1/4 cup sour cream
1 tablespoon lemon juice fresh
3/4 cup nuts chopped

Directions:

In a large saucepan mix water, sugar, cinnamon or red hot candies and food color. Bring to a boil over medium-high heat reduce heat to low and simmer for 10 minutes.

Add apples. Basting frequently so apples will absorb color and flavor, simmer for 10 to 15 minutes or until apples are barely tender cool. Remove apples, cover and chill reduce syrup over medium heat until about 3/4 cup remains. Cover and chill.

In a small bowl mix cream cheese, nuts, sour cream and lemon juice. Cover and chill for 30 minutes.

Form cream cheese mixture into 12 balls. Roll in nuts and place in center of each apple half. Spoon 1 tablespoon syrup over each apple half. Serve as a garnish for roast pork or roast turkey.
