Carrot Raisin Sandwiches

Serves: 4

1 cup carrot, finely shredded
1 cup raisins finely chopped
1/4 cup mayonnaise
4 drops lemon juice (optional)


Combine carrots and raisins moisten as desired with mayonnaise (or salad dressing). If desired, add a few drops of lemon juice. Makes enough filling for 4 sandwiches.
Note: Carrots and raisins may be ground together rather than shredded and chopped. For variety, celery or nuts may be ground with the raisins.

Carrot Peanut Sandwiches: Use peanuts in place of raisins.
