Beef And Tomato Quiche

Ingredients

2 cups unbleached flour
1/4 teaspoon salt
2/3 cup vegetable shortening solid
5 to 7 tablespoons water cold
2 teaspoons poppy seeds

1/3 pound ground beef extra-lean, browned and drained
2 cups sharp cheddar cheese shredded or natural Swiss cheese
4 eggs
1 1/3 cups sour cream
2 tablespoons parsley chopped fresh
1 tomato large, peeled and sliced
olives Pitted black, sliced (optional)

Directions:

* For a Beef and Tomato Quiche or Ham and Swiss Quiche prepare the following recipe for pastry or substitute a 9-inch unbaked pie shell. Pastry: * Place flour and salt in bowl cut in shortening with pastry blender until it resembles oats. Sprinkle in poppy seed. Add water to moisten, gather in ball, and refrigerate, covered, for 1 hour (or place in freezer 1/2 hour). Heat oven to 425°. Roll out pastry and fit into 2 shallow 9-inch pie pans flute edge. Bake 5 to 10 minutes. Cool. Sprinkle 1/2 beef and 1/2 cheese over each crust. Beat eggs with cream add parsley. Pour 1/2 of mixture into each crust. Top with tomato slices. Bake 20 to 25 minutes until puffy and lightly browned. Add optional olive slices last 10 minutes of cooking time.
