The Grand Dining Room’s Uncle Bud's Seafood Gumbo

Ingredients

1 cup chopped onion
1 cup chopped celery
1 cup chopped green pepper
1/8 cup bacon fat
1 bay leaf
1 teaspoon oregano leaves
1 tablespoon gumbo filé
2 cups water
1 (14 1/2-ounce) can diced tomato in juice
1 (8-ounce) can tomato sauce
1/3 cup brown roux
1/2 pound medium shrimp
4 ounces shuckled oysters, including liquid
1/2 pound claw crab meat
3/4 cup cut okra
1 Salt and pepper to taste

Directions:

Sauce onions, celery, and green pepper in bacon fat until onions are translucent. Add spices. Add water, tomatoes, and tomato sauce. Bring to a boil, add roux, and cook until mixture thickens. Add shrimp, oysters, crabmeat, and okra and simmer until cooked. Add salt and pepper.


Fun Fact: Both freshwater and saltwater fishing waters are located within a quarter mile of each other at Gulf Shores, Alabama. Seafood booths and outdoor activities highlight the National Shrimp Festival held there each October.
