Curried Chicken and Apple Soup

Ingredients

2 apples, peeled, cored, diced
2 onions, peeled, sliced
2 tablespoons butter
1 tablespoon curry powder
1 teaspoon flour
2 cups chicken stock
1 salt to taste
1/8 teaspoon red pepper
1/2 cup white wine
1 cup half and half
1/2 chicken breast, cooked, diced

Directions:

Sauté apples and onions in butter until onions are translucent. Stir in curry powder and flour, and cook 5 minutes. Add chicken stock, salt, and red pepper. Stir in wine and simmer 10 minutes. Strain and purée solids in food processor. Combine and chill mixture. Just before serving, add cream and chicken.
