Simple Almond Biscotti

Ingredients

2 cups butter, softened
3/4 cup sugar
2 eggs, beaten
3 tablespoons orange zest
1 teaspoon almond extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup slivered almonds, toasted

Directions:

In a large bowl, beat together butter and sugar; add eggs. Mix in orange zest and almond extract until well blended. Stir in remaining ingredients. On a floured board, divide dough in half; roll and form each half into a 10-inch by 1-1/2 inch roll. Arrange rolls on an ungreased baking sheet 2 inches apart. Bake at 350 degrees for 20 to 25 minutes. Let cool on baking sheet for 5 minutes. Slice each roll diagonally into 1/2-inch thick slices. Lay the slices cut-side down on the baking sheet; bake for an additional 8 minutes. Turn slices over and bake an additional 8 to 10 minutes, until lightly golden. Remove from baking sheet to cool on a wire rack.
