10 flour tortillas
2 1/2 cups frozen spinach
2 1/2 cups shredded provolone cheese
2 tablespoons olive oil
1 1/4 cups salsa
1 teaspoon salt
1 teaspoon pepper
1. Place ¼ cup cheese topped with ¼ cup spinach on half of a flour tortilla.
2. Fold tortilla on top of itself and drizzle with olive oil.
3. Cook quesadilla for 2-3 minutes on each side until the cheese melts and the shell is golden.
4. Place the quesadilla on a serving plate and cut in half to serve.
5. Place 1 tbsp. salsa in side dish to be served with quesadilla.
