Chocolatey Cream Pies

Ingredients

1 1/4 cups butter, softened
1 cup brown sugar, packed
1/2 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon rum or rum extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
3 cups quick-cooking oats, uncooked
1 (12-ounce) package semi-sweet chocolate chips

Creme Filling:
1/2 cup butter, softened
2 cups powdered sugar
1 to 2 tablespoon whipping cream
1/2 teaspoon vanilla extract
1/2 teaspoon rum or rum extract

Directions:

With an electric mixer on medium speed, beat butter and sugars until creamy. Add egg, vanilla and rum or rum extract, beating well. Whisk together flour, baking soda, salt and cinnamon in a large bowl. Stir in oats and chocolate chips. Add dry ingredients to wet ingredients and mix until well blended. Drop dough by rounded tablespoonfuls 2 inches apart on parchment paper-lined baking sheets. Bake at 375 degrees for 8 minutes. Set aside to cool. Spread one tablespoon Creme Filling over the bottom of half the cookies; top with remaining cookies.

For Creme Filling:
With an electric mixer on medium speed, combine all ingredients until well blended. Increase mixer speed to high; beat until filling becomes light and fluffy.
