Beef Barley Soup for 100

Ingredients

1 1/2 pounds diced lean beef
7 gallons beef broth or consume
3 1/2 cups diced carrots (1 pound)
1 bunch celery diced (3 cups)
3 large onions diced (1 pound)
1/4 teaspoon black pepper
5 bay leaves
2 quarts plus 2 cups uncooked pearl barley

Directions:

Cook beef in a 22” Maca Dutch oven 5 minutes. Dice beef into 1/2 inch pieces. Prepare beef broth according to package directions. Add beef broth, beef, carrots, celery, onions, pepper and bay leaves to Dutch oven. Cover; bring to a boil. Add barley. Cover; Simmer 25 to 30 stirring occasionally until barley is tender. Remove bay leaves.
