Swedish Meatballs

Ingredients

2 slices white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup minced onion
1 teaspoon plus a pinch kosher salt
3/4 pound ground beef chuck
3/4 pound ground pork
2 egg yolk
1/2 teaspoon fresh ground black pepper
1/4 teaspoon allspice
1/4 teaspoon fresh grated nutmeg
1/4 cup all purpose flour
3 cups beef broth
1/4 cup heavy cream

Directions:

Tear the bread into pieces and place in a small bowl along with the milk and let set 5 minutes or longer to absorb the milk. Meanwhile, add 1 Tbs. clarified butter to a Dutch oven over medium heat and sweat onions with a pinch of salt, until onions are softened and opaque. Remove from Dutch oven and combine with bread mixture.

In a medium bowl, combine the bread mixture, ground meat, egg yolks, remaining kosher salt, pepper, allspice, and nutmeg. Mix vigorously by hand for 5 minutes or with a stand mixer on medium speed for 1 to 2 minutes. Portion meat balls into one ounce balls using a scale or #48 (1 oz.) portioning scoop. Round each meatball with your hands and place on a cookie sheet

Heat the remaining butter in the Dutch oven over medium low heat. Place meatballs into Dutch oven, in a single layer with enough room to turn each meatball. This may take 2 batches. If so place cooked meatballs into a warmed Dutch oven to hold while the second batch is cooking. Sauté meatballs until golden brown on all sides remove meatballs from Dutch oven and hold in second oven to keep warm.

Once all the meatballs are cooked, add flour to the Dutch oven and whisk until the flour is light brown in color, about 1 to 3 minutes. Slowly add beef broth and consistently whisk until the sauce begins to thicken. Add cream and cook until the sauce reaches your desired consistency. Return meatballs to the sauce and gently stir to coat the meatballs with sauce and serve.
