Traditional Chicken Noodle Soup

Ingredients

2 tablespoons olive oil
3 cloves garlic minced
1/2 cup diced celery
1/2 cup diced carrot
10 cups chicken stock
3 cups cooked 1/2 inch dice chicken breasts
8 ounces wide egg noodles
salt and pepper to taste
1/4 cup chopped fresh parsley

Directions:

In a large, heavy stockpot, heat oil over medium-high heat. Add the garlic, celery, and carrots and sauté 4–5 minutes. Add the stock and chicken, reduce heat and simmer 10–12 minutes. Add the noodles and simmer 10–15 minutes, or until tender. Season to taste with salt and pepper. Sprinkle with parsley.
