Lyonnaise Potatoes

Ingredients

5 tablespoons unsalted butter
3/4 cup chopped onion
3 cups cooked and sliced white potatoes
salt and white pepper to taste
3 tablespoons chopped Italian parsley

Directions:

In a large, heavy skillet, heat the butter over medium heat. Add onion and cook until transparent, about 3–4 minutes. Gently toss with the cooked potatoes. Season with salt and pepper and fold in the parsley. Flatten slightly and cook until golden brown, about 3–4 minutes on each side.
