Brazilian Collard Greens

Ingredients

1/4 cup olive oil
1/2 cup chopped onion
2 cloves garlic minced
2 pounds collard greens coarsely chopped
salt to taste
crushed red pepper to taste
1/4 cup red wine vinegar

Directions:

In a large, heavy, deep skillet, heat the oil over medium-high heat. Add onion and garlic and sauté about 3–4 minutes. Add greens in batches and cook until wilted. Season with salt and pepper and then sprinkle in the vinegar and toss.
