Large, doughnut-shaped loaf of bread. The dough is shaped into a circle, then the baker pushes an elbow into the center to make a hole. The hole is then enlarged by shaping with the fingers. After the dough has risen, the hole is made square using the handle of a wooden spoon, or a circle is cut in the dough an inch or two from the center hole.
