Italian Chicken Salad

Ingredients

3/4 cup uncooked fusilli or rotini pasta
1/2 cup zesty Italian dressing
1 yellow or green bell peppers, chopped (1 cup)
1 carrot, shredded (2/3 cup)
4 boneless skinless chicken breast halves (about 1 pound)
6 cups Italian blend salad mix or 6 cups bite-size pieces mixed salad greens

Directions:

1. Cook and drain pasta as directed on package. Toss pasta and 1/3 cup of the dressing. Stir in bell pepper and carrot.
2. Cover and grill chicken 4 to 6 inches from medium coals 15 to 20 minutes, brushing with remaining dressing and turning occasionally, until juice of chicken is no longer pink when centers of thickest pieces are cut. Cut chicken diagonally into 1-inch strips.
3. Divide salad greens among 4 serving plates. Top with pasta mixture and chicken. Sprinkle with pepper if desired.
