Skillet-Fried Chicken

Ingredients

1/2 cup all purpose flour
1 tablespoon paprika
1 1/2 teaspoons salt
1/2 teaspoon pepper
3 to 3 1/2 pounds cut up broiler fryer chicken
vegetable oil

Directions:

Mix flour, paprika, salt and pepper. Coat chicken with flour mixture.
Heat oil (1/4 inch) in 12-inch nonstick skillet over medium-high heat. Cook chicken in oil about 10 minutes or until light brown on all sides reduce heat to low. Turn chicken skin sides up.
Simmer uncovered about 20 minutes, without turning, until juice of chicken is no longer pink when centers of thickest pieces are cut.

Betty's Tip
To reduce the fat to 10 grams and the calories to 230 per serving, remove skin from chicken before cooking. Use 2 tablespoons oil and a nonstick skillet.
