Crunchy Oven-Fried Chicken

Ingredients

1/4 cup margarine or butter
5 cups cornflakes
2 teaspoons paprika
1 teaspoon salt
1/4 teaspoon pepper
3 to 3 1/2 pounds cut up broiler fryer chicken

Directions:

Heat oven to 375°. Melt margarine in jelly roll pan, 15 1/2 10 1/2 1 inch, in oven.
Place cornflakes, paprika, salt and pepper in blender. Cover and blend on medium speed until mixture looks like fine crumbs. Dip chicken into melted margarine, then coat evenly with cornflakes mixture. Place chicken, skin sides up, in pan.
Bake uncovered 45 to 60 minutes or until juice is no longer pink when centers of thickest pieces are cut.

For a lower-fat version, remove skin from chicken before dipping it into the melted margarine.
