Avocado and Grapefruit Salad with Celery Seed Dressing

2 (16-ounce) cans grapefruit sections
1 ripe avocado, peeled, sliced
watercress for garnish
1 cup pomegranate seeds or cranberries for garnish

Celery Seed Dressing:
2/3 cup sugar
1 teaspoon dry mustard
1 teaspoon paprika
1 teaspoon celery seed
1/4 teaspoon salt
1/3 cup honey
1/3 cup vinegar
1 tablespoon lemon juice
1 teaspoon grated onion
1 cup vegetable oil


Drain grapefruit; reserve juice. Brush avocado slices with juice. Arrange grapefruit sections and avocado slices on small plates. Add watercress trim; sprinkle with pomegranate seeds or sweetened halved cranberries. Pass Celery Seed Dressing.

Celery Seed Dressing:
Mix dry ingredients; blend in honey, vinegar, lemon juice, and onion. Add oil in slow stream, beating constantly with electric or rotary beater.
