Gazpacho Salad

Ingredients

2 envelopes plain gelatin
2 cups tomato juice
1/4 cup red wine vinegar
1 teaspoon salt
2 - 3 drops Tabasco
2 tomatoes, diced
1 green bell pepper, diced
1/4 cup sliced green onions
1 small can pitted ripe olives
1 cucumber, peeled, seeded, and diced
16 large butter lettuce leaves
8 teaspoons nonfat mayonnaise

Directions:

Sprinkle gelatin over tomato juice to soften. Place over low heat and stir until dissolved. Remove from heat and stir in vinegar, salt, and Tabasco. Cool until slightly thickened. Fold in tomatoes, green pepper, onions, olives, and cucumber. Place in sprayed or oiled ring mold. Chill several hours. Unmold on butter lettuce. Decorate with mayonnaise.
