Snow White Cheesecake

Ingredients

Base:
1 package graham crackers (1/3 of box)
1 teaspoon ground ginger
2 ounces butter (1/2 stick)

Topping:
1 (8-ounce) carton cottage cheese
1 (8-ounce) package cream cheese, softened
1 cup cream
1/2 cup superfine sugar
1 teaspoon vanilla extract
1 package unflavored gelatin
1/3 cup water
2 egg whites
fresh fruit for garnish

Directions:

Base:
Crush crackers finely; add ginger and melted butter. Press evenly over base of a greased 8-inch spring form pan. Refrigerate while preparing Topping.

Topping:
In a blender or food processor, blend cottage cheese; add cream cheese and enough cream to process smoothly. Add sugar, vanilla, and remaining cream. Dissolve gelatin in water over a pan of hot water. Cool and add to cheese mixture, running machine constantly. Pour into a large bowl. Beat egg whites until soft peaks form; fold into cheese mixture. Spread evenly over Base and refrigerate until firm. Decorate top with any fresh fruit.
