Blanched Edamame with Slivered Almonds


Serves: 5

Ingredients

4 cups fresh edamame pods (green soybeans)
6 cups water
1 teaspoon salt
1 tablespoon organic olive oil
1/4 cup slivered almonds

Directions:

1. Bring water to a boil in a 3- or 4-quart saucepan.
2. Add salt and edamame and cook until tender- crisp, approximately 1½ to 2 minutes.
3. Drain edamame, shock in ice water, drain again and pat dry.
4. Toss edamame with oil and slivered almonds.
