Vegetable Chili Made Easy

1 small zucchini, diced
1 (28-ounce) can diced tomato, undrained
1 (16-ounce) jar black bean salsa
1 teaspoon chili powder
1 1/2 cups shredded milk Cheddar cheese, divided


Combine zucchini, tomatoes, salsa, and chili powder in saucepan. Bring to a boil on medium-high heat; reduce heat; simmer 10 minutes, stirring occasionally. Sprinkle about 2 tablespoons cheese in 4 soup bowls; top with chili. Sprinkle additional cheese on top.
