Easy Chicken Tortilla Soup

Serves: 5

8 cups water
1 (9-ounce) package tortilla soup mix
4 to 6 chicken tenders, cut in thin strips
1 teaspoon Emeril's Essence seasoning
1 bag tortilla chip


Bring water to a boil; stir in soup mix. Simmer soup 12–15 minutes. While soup is simmering, sprinkle chicken strips with seasoning, and lightly cook in a little oil. Add chicken strips to soup during last 5 minutes of cooking. Serve soup in bowls with broken tortilla chips.

Editor’s Extra: Top with shredded Co-Jack cheese, if desired.
