Cream of Tomato Soup Quickie

1 medium onion, chopped
2 tablespoons butter
2 tablespoons flour
1 quart tomato juice
2 cups milk, heated


In a Dutch oven over medium heat, sauté onion in butter until translucent. Remove from heat and stir in flour, then slowly whisk in tomato juice. Return to heat; add salt and pepper to taste. Turn off heat before it boils. Slowly stir in hot milk. Serve immediately.
