Sort, rinse, and drain peas. In large stockpot, cover peas with cold water and bring to a boil. Turn off heat, cover, and let sit for an hour. Drain peas, then rinse. Combine with remaining ingredients in crockpot. Cook on LOW about 8 hours, until peas are tender. Season with salt and pepper to taste.
