Autumn Soup

4 (14 1/2-ounce) cans chicken broth
2 (11-ounce) cans shoe peg corn, drained
1 onion, chopped
1 (16-ounce) can solid pack pumpkin
1 cup half and half


In a stockpot, combine chicken broth, corn, and onion. Bring to a boil, then reduce heat to a simmer. Simmer covered about 25 minutes, until onion is tender. Whisk in pumpkin, and mix well. Cover and simmer 8 more minutes, then add half-and-half. Heat through, but do not boil. Season with salt and pepper to taste.
