Creamy Cucumber Crunch

Ingredients

8 cucumbers
1 teaspoon salt
6 radishes, thinly sliced
1 (8-ounce) container plain yogurt
1/2 cup sour cream
1/2 cup fresh dill, chopped and loosely packed
2 tablespoons lime juice
1/4 teaspoon pepper
1 clove garlic, pressed

Directions:

Remove several strips of peel from each cucumber; cut in half lengthwise. Scoop out seeds and thinly slice each half crosswise. Toss cucumbers with salt in a large bowl; set aside for 30 minutes. Combine remaining ingredients in a separate large bowl; mix well and set aside. Drain cucumbers, pressing to remove as much liquid as possible. Pat dry with paper towels. Add to radish mixture and toss until evenly coated. Cover and chill for at least one hour to overnight.
