Oriental Chicken

Ingredients

1 chicken, cut into 4 pieces
2.000 inch piece of ginger root, grated
2.000 tablespoons garlic, minced
0.500 cup soy sauce
0.500 cup dry sherry
1.000 cup water
1.000 teaspoon salt
0.250 teaspoon pepper
2.000 green onions, , including green top, sliced
1.000 lemon, thinly sliced

Directions:

Rub chicken with ginger and garlic, pressing it into chicken with the back of a spoon. In cooker, pour soy sauce, sherry, and water. Place trivet in cooker and set chicken on top. Sprinkle with salt and pepper. Arrange onion and lemon slices over chicken. Lock lid and bring to full pressure. Reduce heat, maintaining pressure, and cook for 10 minutes. Remove cooker from heat. Naturally release pressure. Remove chicken to a serving dish. Discard onion and lemon slices. Serve hot with rice.
