Chicken Curry in a Hurry


Serves: 4

Ingredients

1 cup white or brown rice, cooked according to package directions
cooking spray
1 pound boneless skinless chicken breast half
4 large onions, cut into thin wedges
1-1/4 cups water
4 cloves garlic, chopped
1 teaspoon peanut oil
1 tablespoon soy sauce
1 teaspoon chili powder
1 teaspoon curry powder
1/4 teaspoon ground turmeric
1 teaspoon ground ginger
2 tablespoons snipped fresh parsley

Directions:

Coat a nonstick skillet with cooking spray and heat. Add chicken and onions. Saute until chicken is lightly browned, about 5 minutes. Transfer to pressure cooker. Add remaining ingredients, except parsley. Lock lid and bring to full pressure. Reduce heat, maintaining pressure, and cook for 4 minutes. Let pressure drop naturally for 4 minutes quick-release any remaining pressure. Stir in snipped fresh parsley and serve over hot, cooked rice.
