Peppery Brisket Roast

Ingredients

1 teaspoon garlic salt
1 teaspoon onion salt
2 teaspoons celery salt
2 teaspoons Worcestershire sauce
1 1/2 teaspoons salt
2 teaspoons black pepper
1 tablespoon liquid smoke
1 (3-to 4-pound) well-trimmed boneless beef brisket
3 tablespoons brown sugar
1 tablespoon dry mustard
1 tablespoon soy sauce
1 tablespoon lemon juice
3 drops Tabasco
1/2 cup ketchup
dash of nutmeg

Directions:

Combine garlic salt, onion salt, celery salt, Worcestershire, salt, pepper, and liquid smoke.

Spread brisket evenly with above mixture. Place in greased roasting pan or baking dish. cover and chill overnight. Allow brisket to come to room temperature. Preheat oven to 300°. Cover brisket and bake 30 minutes.

Combine brown sugar, dry mustard, soy sauce, lemon juice, Tabasco, ketchup, and nutmeg. Mix well. Pour over brisket. Cover and bake 1–1 1/2 hours, or until tender.
