Tuna Ghanouj

Ingredients

1 (6-ounce) can tuna in olive oil
1/3 cup Baba Ghanouj, homemade or purchased
1 tablespoon lemon juice, fresh or bottled organic
1 teaspoon chopped garlic, fresh or jarred organic
1/2 teaspoon salt
1/4 teaspoon ground black pepper
pinch crushed red pepper flakes
1 tablespoon finely chopped Italian (flat-leaf) parsley

Directions:

Break the tuna into large flakes in a medium bowl. Add the remaining ingredients and mix to combine. Use as a dip, a bruschetta topping, or a sandwich spread.
