Smoked Salmon Carpaccio

Ingredients

1 lemon, juiced
2 tablespoons nonpareil (small) capers, drained
1 tablespoon spicy brown mustard
1/2 cup chopped Italian (flat-leaf) parsley
2 teaspoons garlic-flavored oils
2 tablespoons olive oil
kosher salt and coarsely ground black pepper to taste
12 ounces thinly sliced smoked salmon

Directions:

Mix the lemon juice, capers, mustard, parsley, garlic oil, and olive oil in a small bowl season with salt and pepper. If you want a chunky sauce, just whisk the ingredients together. If you want a smooth sauce, puree them in a mini food processor.

To serve, arrange the slices of salmon on a platter or on individual plates. Drizzle the sauce over the top (about 1 tablespoon per serving).
