Chipotle Black Bean Pâté

Ingredients

2 ounces finely chopped walnuts (about 1/3 cup)
1 (16-ounce) can vegetarian black refried beans
1 cup chipotle salsa
1 teaspoon ground cumin
2 teaspoons five-spice powder
1/4 cup finely chopped cilantro or two tablespoons cilantro pesto
salt and ground black pepper to taste
1/3 cup sour cream
1 tablespoon orange juice
1 scallion, trimmed and thinly sliced

Directions:

Toast the walnuts in a microwave on a microwave-safe plate at full power for 2 to 3 minutes set aside.

Mix the beans, salsa, cumin, five-spice powder, and half of the cilantro in a medium bowl. Season liberally with salt and pepper. Mound on a serving plate and top with the walnuts.

Mix the sour cream, orange juice, and remaining cilantro. Top with the scallion and serve with the pâté, along with crackers or toast.
