Pistachio Pineapple Dessert

Ingredients

2 cups (abot 14) shortbread cookie crumbs or vanilla wafer (about 50) crumbs
1/2 cup plus 3 tablespoons chopped pistachio nuts or pecans
1/4 cup butter or margarine, melted
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk (not evaporated)
1/4 cup lime juice from concentrate
1 (4-serving) package instant pistachio pudding and pie filling mix
1 (8-ounce) can crushed pineapple, undrained
1 cup (1/2 pint) whipping cream, whipped

Directions:

Preheat oven to 350°. Combine cookie crumbs, 3 tablespoons nuts, and margarine; press firmly on bottom of 9-inch springform pan or 9x13- inch pan. Bake 8 -10 minutes. Cool. Meanwhile, in large bowl, beat cheese until fluffy. Gradually beat in condensed milk, then lime juice and pudding mix until smooth. Stir in remaining 1/2 cup nuts and pineapple. Fold in whipped cream. Pour in pan. Chill 6 hours. Garnish as desired.
