African Queen

Ingredients

Caramel Sauce:
2 tablespoons sugar
1 teaspoon water
2 cups heavy cream
1 teaspoon vanilla

2 bananas
16 sheets phyllo pastry
melted butter
sugar
4 large strawberries
20 orange wedges
4 mint leaves
4 scoops vanilla ice cream

Directions:

Cook sugar and water in heavy saucepan over low heat until mixture turns a rich golden color. In another saucepan, bring cream and vanilla to a boil. Add to sugar and cook, stirring constantly with a whisk, until smooth. Let cool.

Peel bananas and cut in half lengthwise. Brush one sheet phyllo with melted butter. Sprinkle with sugar. Repeat 3 times, stacking the sheets. Wrap one banana half in the pastry, refrigerate, and repeat with remaining banana halves. Bake wrapped bananas on sheet pan in preheated 375° oven until golden and crisp. To serve, place caramel sauce on half of each plate. Decorate the other half with fruit garnishes. Place cooked banana on sauce and top with ice cream. Serve immediately.

Note:
Spray butter-flavor Pam on pastry sheets, and substitute evaporated skim milk and low-fat ice cream.
